<p>Mark Sisson famously referred to 150+ grams of carbohydrates a day as producing “insidious weight gain,” and Gary Taubes’ best-selling book, Good Calories, Bad Calories, tells the reader over and over (and over and over) that carbohydrates make us fat. The believers of the Dr. Atkins dietary principles, the low-carbohydrate paleo philosophy, or any other low- carbohydrate or ketogenic dietary advice are all on board. But are they right? Will that baked potato, that piece of toast with a bit of jam, or the brownie really lead to “insidious weight gain,” simply because of the carbohydrates?<span id="more-7481"></span></p>
<p>Simply put, the idea that carbohydrates have some sort of superpower that inherently balloons up humans’ midsections is absurd. There is no evidence to support this idea. In fact, the evidence is actually rather overwhelmingly against the theory that carbohydrates make people fat. In fact, research has shown that higher intakes of sugar are associated with leanness (Anderson, 1995).</p>
<p>One theory put forth as to why carbohydrates make people fat (which they don’t) is the insulin theory. This theory states that insulin prevents people from burning fat. And since carbohydrates stimulate insulin increases in the blood the theory concludes that carbohydrates make people fat by preventing them from burning fat. This would be a good theory if it was tenable.</p>
<p>Unfortunately for proponents of the theory, it’s not true, because in reality, things don’t work like that. In reality, though one of the functions of insulin is to suppress fatty acid metabolism, it does so because it is prioritizing the metabolism of available glucose. Once glucose is no longer available, the body will resort to burning fatty acids. That’s how it works. (That is, unless fatty acid metabolism is impaired.)</p>
<p>Let’s say that you have just eaten a baked potato without any butter. I know it sounds pretty unappetizing, but you’ve done it for science. Once your body begins to absorb the carbohydrates, it will begin to produce insulin &#8211; a fair amount, as it turns out. Let’s say that that potato has about 30 grams of carbohydrates that your body will break down into glucose. So your blood now has a bunch of glucose in it. The insulin will help move glucose into cells for use as fuel, and when it does so, it will be signaling the cells to stop burning fatty acids (if they have been) because glucose is available instead. Yay for insulin, because it has just done a great thing! It has fueled your cells with the energy from the food you just ate. Once the glucose from the food that was just eaten has been used, the body will then return to using stored fuel, whether that is glucose or fatty acids.</p>
<p>Next &#8211; again, in the name of science &#8211; let’s say that you eat a spoonful of coconut oil. Being a fat, coconut oil doesn’t trigger insulin secretion. Instead, as the fat is broken down and absorbed into the blood, the cells will use the fat as fuel. Once the fat is used up, the body will then return to using stored fuel.</p>
<p>Hopefully you can see that there is actually very little difference between carbohydrates and fat (the two primary fuel sources in the body) when it comes to the potential to increase fat stores. Basically, what is eaten gets used or stored. Then stored fuel is used. The insulin theory is bogus.</p>
<p>The other theory that is popular is the leptin resistance theory. This theory says that carbohydrates inhibit feelings of satiety and therefore lead to overeating, which causes obesity. It’s a nice theory, but it’s not supported by the evidence. While there is some evidence that some types of carbohydrates (think free fructose, for example) can have this effect, it doesn’t extend to all carbohydrates. In fact, as we’ve already seen, carbohydrates trigger insulin secretion, and insulin triggers feelings of satiety. The studies bear this out in the real world. Carbohydrates (as in real food) don’t make people eat past satiety, though specific types of industrial and refined carbohydrates may have such an effect.</p>
<p>Not only do studies show that carbohydrates don’t make people fat, but real world examples of cultures that depend on large amounts of carbohydrates &#8211; sometimes as much as Son- percent of calories coming from carbohydrates &#8211; demonstrate that they are generally lean, fit, and healthy. Consider the darlings of researchers, the Kitavans, who in the 1990s were shown to eat nearly 70 percent of their calories from carbohydrates (Lindeberg, Nilsson-Ehle, Terent, Vessby, &amp; Schersten, 1994). Obesity is non­existent in the population. Nor is insulin resistance found among the people, for that matter. And there are a great many other examples showing the same thing. Carbohydrates do not make people fat.</p>
<p>Interestingly, the same researchers who studied the Kitavans also showed that in though eating large amounts of carbohydrates, the Kitavan people had lower levels of insulin compared to European populations (Lindeberg, Eliasson, Lindahl, &amp; Ahren, 1999). So once again, the claim that eating carbohydrates causes people to become fat through increased insulin levels is bogus.</p>
<p>What does make people fat? Honestly, we don’t know. There are many theories, and none of them, as yet, can explain obesity in every case. Some factors that may contribute are yo-yo dieting, chronic stress, ionizing radiation, many pharmaceuticals, chronic insufficient sleep, and inflammation. And it does seem that there may be a link between certain types of industrial carbohydrates and obesity. Notably, free fructose as found in very high fructose corn syrup (added to sodas) may play a role, but that’s a far cry from blaming carbohydrates as a whole. The evidence strongly suggests that sugars and starches found in real foods, even partially refined carbohydrates, are not inherently fattening.</p>

<li>1 teaspoon hemp seeds</li>
<li>2 teaspoons flaxseeds</li>
<li>1/2 cup Greek yogurt</li>
<li>1 cup low fat milk or more according to the consistency you desire</li>
</ul>
<h3>Grapes and Kale Smoothie:</h3>
<p>Ingredients:</p>
<ul>
<li>2 cups grapes, fresh or frozen</li>
<li>2 cups kale, washed, trimmed of hard stems, chopped</li>
<li>1 medium banana</li>
<li>3 tablespoons chia seeds</li>
<li>11/2 cups apple juice</li>
</ul>
<p>Method:</p>
<ol>
<li>Peel and chop the banana.</li>
<li>Add all the ingredients to the NutriBullet and blend for 30-40 seconds or until smooth.</li>
</ol>
<p>Add more apple juice to make it thinner if you desire.</p>

<li>Pour into a tall glass and serve with crushed ice.</li>

Even though most of our eating habits are established during our childhood, it doesn&#8217;t mean we cannot change them. If you want to lose weight in a healthy way, you must first change your eating habits and adopt healthy ones.<span id="more-6927"></span></p>
<p>However, you must refrain from making sudden, radical changes such as eating nothing as it can only lead to short term weight loss. Such drastic changes are neither healthy nor can provide success in the long run. Improving your eating habits permanently requires a steady, thoughtful approach in which you Reflect, Replace and lastly Reinforce.</p>
<p>Here’s how the process of Reflect, Replace and Reinforce work in correcting your eating habits and keep your weight in control:</p>
<ol>
<li>Start with creating a list of your eating habits &#8211;</li>
</ol>
<p>the bad as well as the good ones. Keep a food diary for a few days. Write down in it everything you eat along with the time of the day you ate it.</p>
<p>It will help you uncover your habits. You may discover some of your unhealthy eating habits you have been following over years like seeking a</p>
<p>sweet snack to get through the afternoon energy slump.</p>
<ol start="2">
<li>Check the list and highlight the habits that are leading you to overeat. The most common eating habits that lead to weight gain are:</li>
</ol>
<ul>
<li>Eating when not hungry</li>
<li>Eating too fast</li>
<li>Eating while standing up</li>
<li>Eating dessert most of the time</li>
<li>Skipping meals</li>
</ul>

<li>Once you have marked the unhealthy eating habits, identify the triggering factors that compel you to engage in those habits. Pick a few that you would like to work on for improving. Experts advise selecting those habits that are easy to break as this will boost your confidence and prepare you for challenging yourself with more difficult ones. Pat yourself on the back for the unhealthy habits you have managed to get rid of. Recognizing success will encourage you to make more changes.</li>
<li>Review your food diary and make a list of &#8220;cues&#8221; to become aware of where and when you were &#8220;tempted&#8221; to eat for a reason other than hunger.</li>

<p>Use this diary to note down what you were thinking or how you were feeling when you decided to eat, especially when you were eating when not hungry. Was it just stress or tiredness? Knowing yourself is the first step to improving yourself. Note your exact feeling at those times. Most often, you will discover an environmental &#8220;cue&#8221; that is encouraging impulsive eating in you.</p>

<li>Know the common triggers that make you eat</li>

<p>when you are not hungry. Introspect and check which of these triggers are acting on you. Here is the list of factors that usually trigger impulsive eating:</p>

<li>Walking past a candy dish on the counter</li>

<li>Circle the &#8220;situations&#8221; on this list that you face often. Think about other triggers outside this list that may be working on you to tempt you to eat unnecessarily. Think, “What can I do to avoid this situation?” This option works best for situations that involve only you. For example, if your trigger is stopping at a fast food restaurant on the way to work then choose a different route to avoid the situation.</li>
<li>However, you can&#8217;t avoid all situations that trigger impulsive eating like staff meetings at work. Such situations must be tackled using thoughtful tactics. Evaluate your options. You can offer to take notes to distract your attention from food or can sit farther away from the food so it becomes less easy for you to grab something. You can plan ahead and eat a healthy snack before a stressful meeting.</li>
<li>Replace unhealthy habits with healthy ones. If you realize that you eat too fast when you are alone, make a commitment to share your lunch with a colleague or invite a neighbor over for dinner. Other strategies include minimizing other distractions like watching the news during dinner or putting your fork down between bites. This will help you pay attention to how quickly and how much you are eating.</li>
</ol>
<ol start="9">
<li>Here are few more ideas that can help you replace unhealthy habits:</li>
</ol>
<ul>
<li>Eat slowly. When you eat too quickly, you end up &#8220;cleaning your plate&#8221; without realizing when your hunger was satisfied.</li>
<li>Eat only when you are truly hungry and not when you are anxious, tired or stressed. If you find yourself eating when experiencing an emotion other than hunger like boredom, find a non-eating activity to do like calling a friend.</li>
<li>Plan your meals ahead of time to make sure you eat a healthy well-balanced meal.</li>
</ul>
<ol start="10">
<li>Habits take time to develop. Time and again reinforce your healthy habits and be patient with yourself. Keep in mind healthy habits do not happen overnight. If you find yourself engaging in an unhealthy habit, stop there and there and ask yourself: Why am I doing this? What other changes do I need to make? But, do not berate yourself by thinking that one mistake will blow a whole month’s worth of healthy habits. Have faith in yourself. Say, I can do it! It just takes time!</li>
</ol>
<p>Slowly, you will be able to incorporate new healthy habits in your life. And with this, you will start feeling better and lighter as well as more confident about yourself!</p>
